Pumpkin provides protein, vitamins, minerals, carbohydrates, anti-oxidants and fiber. It is an excellent source of Vitamin A and Vitamin C. Pumpkin Pudding

Ingredients: Ghee 4 spoons, Pumpkin 200 grams, Whole milk 1 cup, Cardamom powder 1 teaspoon, Condensed milk 300 grams, Grated coconut 1/2 cup, Roasted cashews, Roasted almonds and Pistachios ...

Recipes
Heat 3 to 4 spoons of ghee in a wide vessel and after that add 200 grams of pumpkin. Now fry it in ghee for about 5 minutes. After this add 1 cup whole milk and cook it in milk till this pumpkin becomes thick. After this 1 teaspoon cardamom powder, 300 grams of condensed milk And add 1/2 cup fresh grated coconut to it. Keep your gas flame medium and keep stirring it till it becomes thick. Now add cashew nuts and almonds. After this you add two spoons more ghee and cook till the ghee gets mixed in the pumpkin. Your halwa is ready.

Pumpkin Raita
Ingredients: Pumpkin (grated or chopped) 1 cup, curd 1 cup, milk 1/4 cup, chopped coriander and green chili, salt as per taste,Red chili powder, roasted cumin powder, mint as per taste, black salt (a pinch) and sugar (1/2 tsp).

Recipe
Heat some water in a pan and add grated pumpkin and cook for about 5 minutes. Then filter all the water and keep aside. After this, put the curd in the mixing bowl along with the pumpkin. After that add milk to it and mix well. Now add salt, black salt, cumin powder, mint powder, red chili powder, sugar and mix well. With this, pumpkin raita is ready.
